Kapi Rice, or rice sautéed with shrimp paste, is a typical Southeast Asian dish that you’ll have the opportunity to taste in many traditional restaurants during your trip to Cambodia. By following this video, you'll learn to cook it yourself at home. It’s really easy, you’ll see! A small tip: if you’ve never tasted shrimp paste, avoid using too much as the flavor is quite strong.

For those who prefer, here’s the written version of this delicious Cambodian recipe:

Ingredients: 

- 1 green mango 

- 1 shallot 

- Cloves of garlic 

- Red chilies  

- Dried shrimp 

- Chinese long beans 

- Palm sugar syrup (can be replaced with powdered cane sugar) 

- Pork meat 

- Shrimp paste (two teaspoons) 

- 2 eggs 

- Rice 

- Salt or chicken broth

Instructions: 

Step 1: Start by cooking the rice. This way, it will cook slowly while you prepare the other ingredients. 

Step 2: In a pre-oiled wok, cook one of the eggs to form a thin omelette. Set it aside for later. 

Step 3: Still in the wok, sauté a little garlic in oil, then add the dried shrimp. Once the shrimp is well-grilled, set them aside for later. 

Step 4: In a bit of oil, add garlic, the remaining egg, a teaspoon of shrimp paste, the meat, and a little palm sugar. Season with salt or chicken broth according to your preference. Once the meat is well caramelized, set the mixture aside. 

Step 5: As in the previous step, add a little oil to the wok, garlic, another teaspoon of shrimp paste, the pre-cooked rice, and palm sugar. Stir-fry well to make the rice crispy. 

Presentation: Using a bowl, shape the rice into a dome in the center of a plate. Around it, place all the prepared ingredients along with the thinly sliced green mango, omelette strips, chopped long beans, shallots, and red chili.
