By following this guide, you'll learn to prepare it yourself at home. It's easier than you think! One tip: if you've never tasted shrimp paste before, go easy on it—the flavor is quite pronounced.
The Written Recipe
For those who prefer a written version, here's how to make this delicious Cambodian dish:
Ingredients: – 1 green mango – 1 shallot – Garlic cloves – Red chili peppers – Dried shrimp – Long Chinese beans – Liquid palm sugar (you can substitute with powdered cane sugar) – Pork meat – Shrimp paste (two teaspoons) – 2 eggs – Rice – Salt or chicken stock.
- Step 1: Start by cooking the rice. This way it will cook slowly while you prepare the other ingredients.
- Step 2: In an oiled wok, cook one of the two eggs to create a thin omelet. Set it aside for later.
- Step 3: Still in the wok, sauté some garlic in oil, then add the dried shrimp. Once the shrimp are well toasted, set them aside for later.
- Step 4: In a splash of oil, add garlic, the remaining egg, a teaspoon of shrimp paste, the meat, and a touch of palm sugar. Season with salt or chicken stock to your preference. Once the meat is beautifully caramelized, set the mixture aside.
- Step 5: As in the previous step, add a little oil to the wok, garlic, another teaspoon of shrimp paste, the pre-cooked rice, and palm sugar. Stir-fry until the rice is nicely toasted and crispy.
Plating: Using a bowl, shape the rice into a dome in the center of the plate. Arrange all the prepared components around it, along with thinly sliced green mango, sliced omelet, chopped long beans, shallots, and red chili.
